A little About the Honorable Mention Prize Winner

Cathy Mealey
Cathy Mealey has been married for fourteen years and is the mother of a ten-year-old boy and a nine-year-old girl. In addition to being a great cook, Cathy is also a children’s book writer and she blogs at www.bildebok.wordpress.com. She’s also a lifelong Massachusetts resident.
When asked about her cooking background, Cathy explained, “I currently cooking at least three separate meals per night:  one for each kid and a meal for us!” 
We wondered how she developed her recipe and why she thought honey was one of its essential ingredients. What we learned was she shares something in common with fifth generation beekeeper, Judy Endicott Manzone. “My father kept bees as a hobby for many years while I was growing up,” Cathy said. “There was always more than enough honey to go around, and my mother was a genius at finding creative ways to use honey as a primary sweetener in her recipes.”
In terms of her own cooking, Cathy added, “while we had plenty of honey-themed baked goods, it was exciting to develop a honey-based recipe that complimented a healthy green salad!  This dressing is particularly good on a baby spinach salad with cherry tomatoes and cheddar cheese.” Cathy went on to say that whenever she makes this dressing she’s asked to share her recipe. She’s also happy to share it with all our Facebook friends.
